Fourth City Barbecue is, in many ways, a love letter to Saint Louis. We’re sharing our love and appreciation for our community through food, passion, and tradition. We believe that barbecue will always have a story to tell and sharing stories is how we grow closer as a community.
Saint Louis is a barbecue city–ask anyone. There’s a rich barbecue tradition here, and it’s been this way for over a century. But in a city where the conversation about barbecue has become stagnant, we are aiming to spark a new conversation. One where attention to detail and the live-fire tradition is the focus.
We are proud to be the only all wood barbecue joint in Saint Louis. Our fires burn with locally harvested Missouri white oak and hickory, and our goal is to show you what barbecue can be like with no corners cut.
Our Saint Louis style ribs and rib tips honor the barbecue traditions of this city, while showcasing the textures and flavors we’ve grown to love. Sweet, savory, and bite off the bone.
Our briskets smoke for 12 hours on a hand-stoked fire and rest for 12 more in a temperature and humidity-controlled environment, resulting in optimal texture and fat rendering.
This is barbecue in its purest form. Hot wood-fired coals, burning embers, and a whole lotta love—signed by us, delivered to you.
